The Gyuto is Japans’ equivalent to the standard western-style chef’s knife, able to take on nearly any task in the kitchen, a perfect all-rounder. High Carbon steel (Aogami Super) forms the cutting edge, with Stainless Steel (SUS405) forming the rest of the blade for superior rust resistance.

Aogami Super is considered the most premium knife steel in Japan, with incredible sharpness and hardness, keeping your blade sharper for longer.

CONSTRUCTION: San Mai is a Japanese technique where the steel that forms the cutting edge is wedged between stainless steel or iron for greater durability and rust resistance.

HRC: 65 - This blade is razor sharp but can chip if used inappropriately. The care sheet supplied with your knife will give you so do’s and don’ts for using your knife safely.
