Hand-forged, high-carbon Nakiri, masterfully crafted in Japan.

This is a perfectly functional knife, that has made it’s way into the reduced section due to a small mark on the face of the blade.

HANDLE: Traditional Japanese-style octagonal handle, with plastic waste collected from restaurants and cafes in East London through our recycling scheme: The ReCycle Lane.

THEME: Vincent Van Gogh, Starry Night. Vol. 1 of the “CANVASSED” collections.

BLADE: The Nakiri is built for chopping veggies. The flat blade profile and high clearance helps fly through vegetables like butter.

Hand forged using Aogami no.2 Steel, giving the blade fantastic edge retention and superior sharpness. “Kurouchi” finish (leaving black finish from forging on the blade) to increase rust resistance.

CONSTRUCTION: San Mai is a Japanese technique where the steel that forms the cutting edge is wedged between soft iron metal for greater durability and rust resistance.

HRC: 63 - This blade is razor sharp but can chip if used inappropriately. The handbook supplied with your knife will give you so do’s and don’ts for using your knife safely.
