Hand Forged Santoku - Starry Night
Hand-forged, high-carbon Santoku, masterfully crafted in Japan.
HANDLE: Traditional Japanese-style octagonal handle, with plastic waste collected from restaurants and cafes in East London through our recycling scheme: The ReCycle Lane.
THEME: Vincent Van Gogh, Starry Night. Vol. 1 of the “CANVASSED” collections.
BLADE: The Santoku is a fantastic all-rounder for hobbyists and professionals alike. Hand forged using Aogami no.2 Steel, giving the blade fantastic edge retention and superior sharpness. “Kurouchi” finish (leaving black finish from forging on the blade) to increase rust resistance.
CONSTRUCTION: San Mai is a Japanese technique where the steel that forms the cutting edge is wedged between soft iron for greater durability and rust resistance.
HRC: 64 - This blade is razor sharp but can chip if used inappropriately. The handbook supplied with your knife will give you so do’s and don’ts for using your knife safely.
